These dinners are exclusive and limited in guest numbers due to capacity limits in the restaurant so get in quick to secure your booking.
Cuisine Restaurant will be following Covid guidelines with regards to capacity limits and social distancing. Unfortunately at this time we are unable to offer table sizes of more than 10 people for these events.
MEET BEN WILLIS
Head Chef/Owner Aubergine Restaurant – Canberra
Ben has owned and run Aubergine in Griffith, Canberra since 2008. Ben’s career as a chef started in Canberra where he completed his apprenticeship before heading off to Sydney and then overseas to work in kitchens in the UK, Ireland and Canada. In 2008, Ben returned home to Canberra where he and his wife Andrea took over Aubergine intending to put a shine on the Canberra region and all of the great things produced locally. 14 years on, Aubergine has continued over many years to consistently receive positive press and reviews to become Canberra’s most awarded restaurant and considered one of the very best restaurants in the country.
Ben’s food style is contemporary, however, there is always a classic background to his ideas gained throughout his long career. His menu is evolving constantly and ultimately driven by seasonality. The menu is shaped by local farmers, producers, artisan growers and benchmark suppliers that offer the best produce available in any given season. To hone in on these ingredients, and be able to use them in abundance when at their peak, Aubergine offers a set menu comprising of lots of tastes and textures over multiple small bites and composed courses.
MEET SHUT THE GATE WINES
Owners – Rasa Fabian & Richard Woods
Rasa Fabian and Richard Woods have, collectively, decades of experience in the wine industry. From vine to bottle, from the corporate wine industry to small batch winemaking, from the temperate vineyards of the Clare Valley to the cool climes of the Snowy Mountains.
They are a small wine producer that’s passionate about single site and best of region grape varieties. While they have lots of different wine batches, they’re all tiny quantities and they don’t put our label on a bottle if it doesn’t make the cut.
They love classic varieties like dry Clare Rieslings, Pinot Gris, Chardonnay, Shiraz, Grenache and they make up the core of their portfolio but they do crave something a little off beat like Fiano, Sangiovese and Tempranillo.
Rasa and Richard call the Clare Valley home and spend the majority of their life there but they also have a foot in the Snowy Mountains NSW chasing cool climate grapes as well, the best of both worlds really.
