From a young age, Jean-Michel was always helping in the kitchen at home, his mother and grandfather both being chefs before him. Starting his
apprenticeship at a 2-star Michelin restaurant was a dream come true and a fabulous opportunity to learn about every aspect of French cuisine.
Travelling and working his way around the world saw Jean-Michel work in kitchens from Switzerland, the Channel Islands and Thailand, finally
arriving at the Dorchester in London where he worked for Anton Mossiman at The Terrace restaurant.
Shortly afterwards, he relocated to Australia, where he worked for Herbert Franchesini at the Brisbane Hilton, responsible for the Hilton’s
fine dining establishment, Victoria’s and involved in the Hilton’s annual master classes.
In 2000, Jean-Michel moved to Thredbo to take up the role of Executive Chef at the Thredbo Alpine Hotel where Jean-Michel’s talents were showcased
in the well received winemaker’s dinners and, of course, his favourite celebration, Bastille Day.
After a well-deserved break, travelling in Europe and visiting his family in Alsace, Jean-Michel established his own restaurant in Thredbo,
Jean-Michel at the Knickerbocker. Running the restaurant with his wife Georgie was a dream come true and the restaurant received great
reviews and awards.
Jean-Michel has now taken on the role of Director of Food & Beverage at Lake Crackenback Resort & Spa.
